HS Soccer Question

My player is currently in 8th grade. She played soccer from the age of 3 up until she was 9. Then she got a little burned out and switched to springboard diving, which she competed until a few months ago when she sprained her back and had to take time off. After she healed she didn't have any interest in going back. Last week she tells us that she wants to go back to soccer, and definitely play for the HS next year.
I know fall rec teams are all registered and games start soon. I thought she could do academy (she was part of Sting at one point) but it looks like she's aged out and would be select. Well, she's got some work to do before playing club level again. She's in shape due to diving and being in Sea Cadets it's just working on her skills.
Is there teams that just do skills and scrimmages for kids not on teams? She will be playing on her 8th grade team in the spring but hates just sitting around. I'm not a coach/parent so I can't even think if there is drills she could do at home. I'd rather just sign her up for something and take her each week leaving the coaching to the professionals.
