Quick question... I know that signing day is July 1st, but what would happen in the following scenario?

You show up for signing day party in July 1st and only 10 girls show up, Does the club have a later deadline to fill the roster?

Also what happens to those girls who see the poor turnout and change their minds? Can they still find a spot with another club after July 1st?

You may sign ANY TIME AFTER JUNE 30th. The huge majority sign on July 1st because they are trying to secure a team at the earliest possible date.

Remember once you sign you are under contract. Once you are under contract you can not sign with another select team unless they give you a release.

July 1 is NOT a deadline to complete a roster - the team just needs enough players by a later league deadline to apply for a spot or to retain a bye.

If only 10 girls show up, don't sign the contract. Freedom is priceless in this instance. Decide if you want to wait for the coach to find a few more players. Free agents can find someone to take their money after July 1.
